Roasted Asparagus and Garlic Soup

5 Leeks
1/2 cup Olive oil
2 cups red lentils
3 bunches of asparagus
10 cloves of garlic
6 quarts water
salt
tabasco

Cut stems of asparagus and place in pan with garlic and drizzle with olive oil. Roast in 400 degree oven aprox 35 min. While roasting veggies...sautee leeks in olive oil. Add 4 quarts water and add lentils. Cover and simmer. When asparagus/garlic are tender puree in food processor. Add to lentils and add additional water. Season to taste w/ salt and tabasco. Yumm Yumm
